Mini Countertop Oven Pizzas - Two Ways

Ingredients

  • Sandwich Thins
  • split in half (see the ones I bought below) You can always use a bagel or crust of your choice, but these bake beautifully for a thin lighter bite and slight crunch!
  • d:4
  • pizza sauce / marinara of choice
  • shredded mozzarella cheese
  • canned or fresh pineapple
  • cut into small pieces
  • slices
  • thick applewood smoked bacon
  • 1 slice per pizza thin
  • d:2
  • Italian Seasoning
  • fresh cherry tomatoes
  • cut into thin disk
  • fresh parsley
  • minced
  • fresh corn

Steps

  1. Preheat your countertop oven to Bake - 425 degrees. On the small cookie sheet, line with parchment paper and lay 4 strips of applewood smoked bacon. Once preheated bake for 15 minutes. The Bacon will be beautifully crisp and brown. Set aside to cool. Crumble when cooled.
  2. Preheat your oven by dialing to the pizza function on the oven as seen here.
  3. Divide your two sandwich thins to make 4 thin rounds as pictured here.
  4. On the pizza pan that came with the oven, place your four sandwich rounds and spread an even layer of marinara sauce.
  5. Top all four with mozzarella cheese. On two of the pizzas top with pineapple, bacon crumbles, and Italian seasoning. On the other two pizzas top with fresh corn and cherry tomatoes thinly sliced to your liking. Sprinkle fresh parsley on top.
  6. Once the pizza function is preheated bake the pizzas for 10 minutes. Once the 10 minutes is complete set the function to broil and broil for 4 minutes to get the cheese bubbly.
